Is it fair that my parents signed me up for summer SAT class, and then make me study on last day of school?

I definitely agree to what your saying. Your parents obviously want you to achieve the best you can with your Education and to study hard ! But they also need to know that sometimes, children want a Break and just some time from Studying ! Half your life, all your going to do is Study so "Parents" if you are reading this then I think you should give your Daughter a bit of a break ! When she does have nothing to do then yeahh it might be a good idea in which you can just do a bit of Studying or Work but Summer Holidays are mainly for fun and your time to Relax and forget about the Studies ! I hope you understand what the sitaution's like and im pretty sure you didn't study extra classes without breaks when you were children ? and we all know what Stress we come through, so just give her a break and let her have a bit of a fun, without Tension !
